This is a nice way to use up tomatoes from your garden!
Quick, easy and very yummy.
Lay thick sliced tomatoes on a parchment lined baking sheet.
Sprinkle generously with salt, sugar, Italian seasoning and garlic powder.
Drizzle with olive oil.
Bake 3 hours at 250 F degrees.
Beware, though, your house is going to smell wonderful!
I used them to top a pizza crust. No sauce needed...just cheese!
I used a ready-to-bake crust and followed the baking directions on the package.
The flavor is intense and delicious.
These tomatoes are also wonderful chopped into pasta
or layered in sandwiches. Enjoy!

DeleteYour tomatoes are so deliciously RED!! (all over) Somehow our tomatoes ended up with one green side. What do you think that was from? My husband likes to bunch the plants altogether on the side of the house so that might be the problem. Perhaps not enough direct sunshine. Last year, the power gave out for a week and we lost all our tomatoes in the refrigerator. This year, they're partly green, as I mentioned. *sigh*...amateurs
ReplyDeleteOh, that's weird! I don't pick them until they are completely dark red and sometimes I have to wait until the green ripens around the stems but I've never heard of your problem! lol! Maybe it really is the sun....mine do get all day sun. I'm sure yours still taste good, though! I don't think I've ever had a bad summer tomato! ha.

DeleteHi Bets, looks great. Is slow roasting important? I normally roast at 400 degrees never over an hour but I've never roasted tomatoes.
ReplyDeleteYou know...I'm not sure! That's just what my recipe said. I bet you could do it at 400 but it wouldn't take long at all!

DeleteLooks QUITE yummy. I'd try it, but we don't have any extra garden tomatoes this year. I don't think they set fruit when the temperatures are as hot as we've had this summer.

DeleteThat's my kind of pizza. that's the ay I order mine when out and how I make it at home. But I just slice mine and lay them on the cheese. I will have to try your tomaoto recipe before adding them next time. It looks like a marguerita pizza at Spageddies...YUM!
