I saw a bag of tri-colored potatoes at the grocery and thought
they would be fun to use. Those purple ones are really beautiful
with their deep, rich color! And you know, they really don't taste any different!
I've made this warm potato salad a few times this summer already and it's
such a nice change from the traditional mayo-based one.
And..you can make it right before dinner and don't have to worry about
chilling time or keeping it cold on a picnic.
Warm Tri-Colored Potato Salad with Vinaigrette
1 lb. small young potatoes
1/4 c olive oil
2 T lemon juice
1 T dijon mustard
1/4 c vidalia onion, very finely chopped
salt and pepper to taste
2 t sugar
1/4 t dill weed or 2 t fresh dill
6 strips crispy bacon, crumbled.
Cut potatoes into bite-sized pieces and boil in salted water until fork tender.
Meanwhile, in medium sized bowl, whisk dressing ingredients together.
Fold in hot, drained potatoes and bacon. Serve warm.
I used the precooked bacon and crisped it up in the microwave for 2 minutes.
Yum.

DeleteWell I'm a hour late.....I made "tradtional" potato salad this afternoon. Bummer. Had I paid you a visit earlier, I might have made a trip to the store to use your yummy looking recipe. Next time. So colorful...bet it taste as good as it looks.

they aren't green,...they are golden....although they do have a greenish hue! ...along with red skinned and purple. :)
