1 pound strawberries, chopped in small pieces
1 c sugar
1/4 c water
1 t lemon juice
tiny pinch of cinnamon
Combine all in saucepan and simmer on low heat
for about 1 hour, stirring occasionally.
I keep a saucer in the freezer while I'm simmering the preserves. That way I can put a spoonful on the saucer to cool it quickly to check for the right thickness. This recipe works well for any fruit.

Kathy ~ my boys eat the strawberries! They eat 8-10 pounds a week! I bought one extra for the preserves. ha.

oooh, just your photo makes me nostalgic for the strawberry preserves I used to make every year. There was a place not too far from my home where you could pick your own strawberries and every year I would get a ton and preserves dozens of jars. The strawberry place is no longer in business and so I don't do it anymore. Great recipe. I am sure your boys just eat it up.. :-)
