Chocolate Zucchini Bread

This could really be called cake.
Rich and moist.
Best aged one day.

Chocolate Zucchini Bread
3 eggs
2 c sugar
1 1/4 c vegetable oil
4 c grated zucchini
2 t vanilla extract
6 T unsweetened cocoa powder
2.5 c flour
1 t baking soda
1 t salt
2 t cinnamon
1 c chocolate chips

In mixer blend eggs, sugar and oil well.
Add zucchini, mix well.
Sift dry ingredients and mix on low.
Fold in chocolate chips.
Bake at 350 in greased bundt pan.
(I used an angel food cake pan)
for 50-55 minutes.
toothpick test

  5. Another great idea from Betsy's kitchen. Another recipe I will try, and put in my collection of Quick Breads.

    I have put chocolate chips in banana and pumpkin bread, but never thought of making it chocolate w/ the chips too.

    Yummy....I will try it!

  12. I have several zucchinis staring at me right now so I might try this later on today. I usually do zucchini chocolate cake but haven't did that either this year. Need to pull out the old zucchini cookbook! Have to shred some to freeze for the zucchini/pineapple bread I do at Christmas.

  14. Oh my gosh, I'm printing this recipe out. I have a zucchini bread recipe that I love. It is moist and delicious, but sans the chocolate.

  20. Good gracious, I have never even heard of zucchini, never mind zucchini bread. As for the chocolate variety, it does sound very tempting - whatever zucchini may happen to be.
