Since so many of you are getting snowed in,
I thought I'd give you the perfect soup
recipe to warm you up!
It makes a lot and the leftovers are great, too.
2-4 c cooked chicken
4-6 c chicken broth
1 can chopped tomatoes
2 onions, chopped
2 t dried parsley
1 clove garlic, crushed
1/2 c ketchup
4 ribs of celery, thinly sliced
2 bay leaves
1 t dried oregano
2 t dried basil
1 T salt
1 t pepper
16 oz bag frozen mixed veggies
1 1/2 c broken pasta
Place all ingredients in soup pot.
Simmer one hour.
(I used 1 can each of sliced potatoes, carrots,
green beans and corn to replace the frozen bag)
And this is what happens when you get your camera
too close to the steamy pot! LOL!
Stay warm!
Yum, this looks fab Betsy, but I'll need to turn it into Chicken Minestrone Salad, as we're expecting a temp. of 104F. here in the Adelaide Hills tomorrow! Cooler for Chrissie Day though thank goodness.

Oh, Millie ...yes, you need to turn it into a salad! And actually, that sounds good..chicken, pasta, veggies...Italian dressing...yum!

I love soup. My whole family loves soup. For by daughter's first birthday I served four different kinds of soup and we had a bring your own bowl party. I don't own enough bowls for that many people.

Hahah. Funny ending. that soup looks incredibly savoury. Yumm. I can almost smell it from here. In fact, with all the snow we just got it seems like maybe I should make it for xmas lunch actually.
