Dark Whole Wheat Bread

If you like that dark bread they serve at The Cheesecake Factory,
this is oh so very similar! I combined 3 different recipes
and did a few trial recipes before I got it right.
I know everyone's bread machine is a little different, so
you may have to tweak it a little for your machine.

Dark Whole Wheat Bread
1 c milk
1 c water
3 T vegetable oil
2 T molasses
6 T brown sugar
1 t salt
2 c bread flour
1.5 c whole wheat flour
1 c rye flour
1/4 c corn meal
3 T cocoa
4 t vital wheat gluten
2.5 t rapid rise yeast

Put ingredients in machine in order given.
When bread begins to rise, sprinkle with
a handful of oats.
After baking and while still hot, brush top with
soft butter and lay clean towel over to steam
and soften.
My settings were for 2 lbs., whole wheat,
and medium crust.
Yum!

  2. Jill ~ that would be wonderful! This bread is rich and slightly sweet...you can't taste the rye at all. It was great toasted for breakfast! Pass the apple butter! Yum!

  3. Betsy, I love wheat bread. There is a Big Sky bakery here that makes the best bread. Yum! I also bought a love of Flax Seed bread from Target not too long ago and it was really good too.

    Your bread looks delicious. Lots of butter on the end piece would be my preference, if you please.

  6. Looks beautiful! My bread never comes out quite right, probably because I make too many substitutions. I am going to try this recipe and follow it to the letter!

  11. So here's the deal, and be prepared since you know how I sometimes am with recipes...

    Did you ever have the dark brown bread they had at Lone Star? Is it like that? My kids loved that and the one Lone Star we found in Virginia served rolls. Ick!

    I don't have a bread machine, so when I do twist my own arm and make bread, I do it with an easy recipe by hand. So now what do I do with your lovely recipe?

  12. Kayren ~ I've never eaten at Lone Star, so I don't know! I do think this recipe would be fine without a bread machine. I would just use your mixer and then let it rise in a bread pan about 1 hour in a warm place and then bake 350 for 50 minutes or so.
    You could google the lone star bread and see if you can find a recipe. That's how my journey started with this kind!

    I love mine and wonder why they aren't more popular. The bread looks great! I might might need to bake some. I esp. love the bread machine's ability to help me out.

  17. Betsy, just wanted you to know that I bought rye flour, molasses and wheat gluten yesterday and made the bread for dinner! I loved it - and such a dense, big loaf - half of it is left. My husband like it as well, the girls - kind of (it's a bit odd for their unadventurous tastes!). Thank you so much for creating and sharing the recipe!

  19. Mmmmm...this looks a lot like the brown bread that was served with soups and stews in Ireland. It was so good.

    I don't have a bread machine so I'm happy you gave the directions to Kayren on how to make it without.

  20. I just made your bread to the letter and it turned out awesome. I love the butter addition. Most bread makers make it just a bit too crunchy, but the butter softens it up and it is really good. Both my little kids are devouring it as I write. Thanks for posting it!

  22. I made this bread twice, and both times it caved in during baking. Still tastes good. But I have made lots of other breads in my bread machine and never had them cave in. What do you suggest I do to alter this recipe so that it doesn't rise SO high then cave down creating a giant dent in the loaf?

  23. I've made this bread twice and both times it came out with a giant dent in the middle. I think it rose so high, then went concave. What can I do to alter this recipe so that I don't end up with another sunken in load of bread? This has never happened with my bread machine before using other recipes... Thanks for any tips here!
