Grilled Sweet Potato Wedges

1. Prick whole potatoes and microwave until barely tender.
(Sharp knife should insert easily, but should not be mushy.)
2. Cut into wedges, 3/4 inch thick.
3. Brush with olive oil, kosher salt, pepper, coriander and basil.
4. Grill 2 minutes on each side.
Yum!

  3. Oh, yummy, I want some. I wonder if you can grill them in a grill pan on the oven? That's all I can do right now since I'm still in this apartment.

  5. We make potato wedges up here....we call them Jo Jo's. I never thought of using sweat P's. We'll have to give them a whirl. Have a nice weekend.
