1 1/4 c sugar
2 t baking powder
1 t baking soda
3/4 t salt
1 t cinnamon
1 c chopped pecans
1 whole egg plus
1 egg yolk
1 c sour cream
6 T butter, melted
2 T milk
1 t vanilla extract
Sift dry ingredients, add pecans, set aside.
Wisk together wet ingredients.
Stir wet and dry together just until combined.
Place in muffin tins.

Sprinkle with topping ~
2 T sugar
1/4 t cinnamon
1/2 c chopped pecans

Bake at 350 20-25 minutes
or until toothpick comes out with crumbs but not wet.
Sounds very good. Especially with a hot cup of Starbucks coffee!

ReplyDeleteThere is a cafe here in town that serves the most delicious little pecan muffins with their chicken salad plate. Since I am going to a ladies salad supper this Friday evening I'm thinking that I may just have to make your muffins for all of us to eat with our salads!
