Chewy Pecan Cookies

2 1/4 c flour
1/2 t baking soda
1/4 t salt
3/4 c oats
3/4 c brown sugar
3/4 c white sugar
1 c butter, softened
2 eggs
2 t vanilla extract
2 c chopped pecans
Combine dry ingredients in small bowl and set aside.
Combine wet ingredients in mixer and beat at
medium speed until light and fluffy.
Stir in flour mixture, pecans and oats just until
combined. Drop dough by rounded tablespoons
onto parchment lined cookie sheets.
Bake 10-12 minutes, until nicely browned.
350 degree oven.

  8. Well you'll be pleased to know that I baked your cookie recipe today and it went down a storm. My Spanish in-laws were very impressed and have now commissioned a second batch. I couldn't get pecans so used walnuts, but that worked fine. The only problem I had was getting the dough into cookie shapes, how is that done exactly ? Anyway, thanks a lot for the recipe, and hopefully you'll be pleased to know it is now being eaten in the Mediterranean.

  9. Factory ~ Great! I'm so glad they turned out well...and the most important test...the inlaws approved! Walnuts sounds delicious! I use an icecream scoop to get that round, uniform shape. (the kind with the little arm that swivels when you squeeze the handle). Thanks...and I'm glad you liked them!

  15. This recipe has enough rave reviews that I will make them this afternoon for my Navy son who is coming home for Thanksgiving. It's the only thing he asked for; "chewy pecan cookies". Thanks for helping to make him happy.
