I don't usually like my zucchini to grow this big!
But sometimes they can do this overnight, especially if it rains!
This year, instead of making loaves and loaves of bread
I've been stuffing them and baking them!
Just halve the whole zucchini and then cut lengthwise.
Hollow it out a little by taking out the pith and seeds.
Drizzle with olive oil and then add anything Italian sounding.
I used salt, Italian seasoning, garlic, onions, peppers, tomatoes,
even a little left-over chicken. Top with cheese and
more olive oil. Bake for 30 minutes at 400F.
We like ours tender but still a little crisp and not mushy.
The cheese will be brown and bubbly.
Very tasty! This time we had chicken in it,
but it's really great as an all veggie dish, too!

I think I would have to say zucchini SHIPS rather than boats. So yummy. I love that idea. Some of the Mexican markets here in Baldwin Park have wonderful produce.. I will have to look for BIG zucchini and try your recipe. Baldwin Park is 80% Hispanic, 15% Asian...and then us!! I'm loving the mixture and the cultures. Even learning a few words in Spanish, and trying their pastries. In this new chapter...lots of new things to enjoy!

ReplyDeleteActually, I didn't notice..they were thin and white. I did laugh at how big it was. I usually hate it when that happens but I think I'll let them get that big on purpose now!

ReplyDeleteI always grew too much. I froze the bread and it was great in the fall with cream cheese spread over it. I make my own spaghetti sauce and I used to finely grate it in that to fool the kids! lol!

DeleteI must admit I've never tried that way to cook courgettes. I usually make a tomato and courgette gratin, or use them in ratatouille. I'll have to give your recipe a whirl sometime! Courgettes don't seem to grow as big here in England as they do in the US of A.

I never knew you called them courgettes! Yes, our name sounds more Italian and yours more French. You would love my tomato zucchini pie with a cornflake crust. Just put the title in the search box to see it. I need to make it soon. It's wonderful! Kind of like a quiche.

DeleteWhen you have a glut of courgettes, you need a lot of different recipes so you don't get bored. This looks a good one. Like you, I don't like them overcooked and mushy.

DeleteLove these. Hubby...not so much but I don't care. ha. I do all veggie and could eat them every day. Shredded hash browns are really good mixed in them too. Just steam them a minute or two to make sure they finish cooking on the zucchini. I usually use the little carton ones from Costco.
