Betsy's Three Layer Lemon Bars

shortbread crust, tart lemon zest, sweet glaze
Betsy's Three Layer Lemon Bars
CRUST
1/2 c powdered sugar, 2 c flour, 2 sticks cold butter
Place in food processor and pulse until combined.
Press into greased 9x13. Bake 300 for 20 minutes.
FILLING
4 eggs, 4 T flour, 2 c sugar, zest from 2 lemons
4 T lemon juice, 1 t baking powder, 1/2 t lemon extract
Whisk together and pour over hot crust.
Bake 40-45 minutes until nicely brown and knife
comes out clean when tested in the center.
GLAZE
2/3 c powdered sugar, lemon juice
Whisk together. Should be thin enough to drizzle.
Spread over hot bars.
Cool completely before cutting.

  6. I would like to announce that lemon bars are my favorite dessert in the world. However, I never make them because I am the only one in the house who will eat them....and I'll end up eating the whole pan. These looks awesome and I have copied your recipe :)

    I'll stick with my now 19 cans of pringles and that is it
    Anything else and my stomach will have a fit
    But I know you know how picky one can be
    As you have not one but three
    Ok really two
    But it didn't rhyme through and through

    That's just ewwww
    Ok I have to leave now as my nose is starting to curl

    Gosh, that's a lot to devour!
    But I know two of my boys could do that, too!
    Maybe they'd even eat twenty-two!

    As for me, I'd rather eat the whole pan of lemon bars
    But then I'd be as big as a car!

  13. Your last bit of direction was to "Cool completely before cutting".
    That would be almost impossible for me!
    I'd probably end up with a numb tougue because I couldn't let it cool down enough.

  36. What a great idea to add a top layer to lemon bars. I usually use meyer lemons to cut the tartness, but this would be great for conventional lemons.

  60. I just made these and put them on my blog with a link back to yours - they were fantastic! I need to bake the crust a bit more and wait for the bars to cool before glazing (my glaze didn't look as good as yours) but I think this trumps my old lemon bar recipe. Thanks!
