Cornbread Salad


There are a lot of versions of this recipe going around.
I tried one on Pinterest and then tweaked it to our liking.
We like it a lot and I've made it several times already.
If you've never tried cornbread salad, you really should,
especially if you like Mexican food!


Betsy's Cornbread Salad

One box of Jiffy Cornbread mix.
Mix up batter according to directions on the box
and then add 1 t each of
chili powder, oregano, and cumin.
Add 1 T sugar and 1 small can of chopped green chiles.
Bake in a greased 9x9 pan at 400 degrees for 15-20 minutes.
Toothpick test.

Cool completely before cutting into 1" squares.

The dressing.... 
1/2 c ranch dressing
1/2 c sour cream
1 T sugar
1 t lime juice
Whisk and chill until ready to use.
(sometimes I just use bottled chipotle ranch dressing)

To assemble the salad, layer ingredients below
in a large bowl.

cornbread cubes
 1 can black beans (rinsed and drained)
1 can corn (drained)
 1 diced tomato
 1/2 diced green pepper
 1 small diced cucumber
the dressing ~ place dollops randomly
1/2 c chopped cilantro
1 c shredded cheese

Use half of each ingredient so you can repeat and have
2 layers of each.  For instance, use half the cornbread,
half can of black beans, etc.

Do not stir.  Chill until ready to serve.
Enjoy!

    1. If you can bake a cake, you can do this. :) Baking the cornbread is probably the most difficult part.

      I'm glad to know you have not stirring and enjoying down pat, though. lol.....really laughed at that one. :)

    6. It rarely happens...but it is so much better if they say who they are. I had an anonymous commenter tell me months ago that they were disappointed I didn't go on a picnic like my summer fun to do list said I would. Wow. Disappointed? I couldn't believe it. It was my list...and all in fun. No rules to complete it all. Geesh. haha....I still don't know who that was.

    2. Betsy, I has this idea of making a binder cookbook with the plastic page savers, using a full page with picture and recipe. I've got a lot of them from the computer. The front of the binder has a plastic sleeve, so I took a picture of me in the kitchen wearing my apron and checking something in the crock pot for the cover. I plan to make 4 so each of my kids can have one. Might have it ready for Christmas, and then they can add pages too.

  5. I've never had this but it sounds and looks delicious! Lin and I enjoy Mexican food. The spicier the better for me but he enjoys the milder flavors.

    1. That's exactly how the mister and I are...I love it blazing hot and he likes it mild. This is mild....but you can always put a bottle of hot sauce by your place setting. haha. Avocado would be yummy in it, too.

    1. It will be a staple around here this summer! Love those meals that can be made ahead a couple of hours and are ready to pull out and serve when it's hot outside. We'd freeze eating it out today, though, wouldn't we? haha....

  7. Wow! That looks great. Wonder if it would make a good potluck entree or if the cornbread cubes would fall apart if they set too long?

    I don't like my cornbread sweet, so I'd probably leave out the extra sugar.

    1. I think it would be fine if you assembled it right before you left for the potluck! We ate the leftovers the next day...not as good as fresh, but still very edible just for us.

    2. p.s...the extra sugar might help the bread crisp up and brown...and that might help it keep it's shape.

  11. Looks tasty - never tried cornbread salad before. I like Mexican, not my most favourite food, but I do like it. There is a new Mexican restaurant near me that I have been to twice and LOVED it - El Catrin. Really cool décor too.

    2. As far as I know it is one-of-a-kind. It is right where I live in the Distillery District. They hired one of Mexico City's top chefs as well as one of their top muralists to create this massive mural indoors that is backlit. It took three Mexican artists (including Oscar Flores) 100 days to create the mural. It is fun and macabre at the same time. They make guacamole at your table - so fresh! And the dishes are extraordinary. Small servings of things - almost like tapas. I could eat there every day! Huge heated patio. It also boasts Canada's largest mescal and tequila bar with over 120 different labels. It's quite the experience.

  17. Looks good! My husband's favorite cornbread was jiffy. Then I found the best cornbread at Costco, but they only sell it around holidays, so now I keep a big box (not hard for costco items) in my second freezer for all year round. :-)
